Instant Suji [Semolina] Dhokla
Ingredients:
Suji 1 cup
Ajwain [Carom seeds] pinch
oil 1 tbsp
Ginger 1 inch piece or paste
Green chillies 6-7 or paste
Salt to taste
Turmeric [haldi] pinch
Yogurt 1 cup
Water quarter cup
Eno fruit salt 2 sachet
For Tempering [tadka]
1/2 tsp cumin seeds [white zeera]
4-5 curry leaves2-3 green chillies - slit
1 tbsp oil
1 tsp Coriander
1 tsp desiccated coconut

Method:
- Take suji in mixing bowl, add ajwain and oil in it.
- Mix them well till crumbly texture.
- In blender pour yogurt,water ginger and chillies, blend them well.
- Incorporate this mixture with suji mix.
- Add salt and turmeric into the mixture and beat until smooth. Make sure that there are no lumps.
- Let it set for 15-20 minutes.
- Add water in steamer and heat it over medium high flame.
- Grease its tray [thali] with 1/2 tsp oil.
- Add the Eno fruit salt in half batter, stir gently and pour immediately into the greased tray and place it in the steamer.[tray must be covered with lid]
- Steam it for 7-8 minutes. [ repeat the same process for another half batter for second tray/batch]
- Take out tray from steamer.
- Heat 1 tablespoon oil in a small pan for tempering. Add mustard seeds when they begin to crackle, add cumin seeds, green chilli and curry leaves and saute for few seconds and turn off the flame.
- Pour prepared tempering over suji dhoklas and garnish them with chopped coriander leaves and coconut.
- Cut the dhoklas into desire size piece and enjoy it with its chutney.
