Delicious and easy to make Chapli Kabab

Ingredients:


Mince meat (Qeema) 1 pao
Onion finely chopped 1 medium
Finely chopped coriander leaves 1 tbsp
Green chilli paste 1 tsp or you can use finely chopped
Ginger paste 1 tbsp
Garlic paste 1 tbsp
Makkhi (Corn) atta (Flour) or Besan 2 tbsp
Salt to taste
Egg 1
Roasted and crushed coriander seeds
Whole spice powder (garam masala) 1 tsp
Pomegranate seeds crushed (Anar dana) 1 tsp (optional)

Method:


  1. Take a big bowl add mince and all the above mention ingredients then mix them well. 
  2. Make flat kabab like chapli and place a tomato slice on it and press it down.
  3. Heat oil in frying pan and shallow fry these kababs on medium flame. 
  4. When kabab becomes golden brown from both sides remove it from pan and put it on paper towel to remove excess oil.
  5. Serve it with onion rings, chutney and naan.

Note: Make sure that mince should be completely dry. Water in mince and onion can be the reason of breaking kebabs while cooking.

Super easy homemade Chicken boti paratha roll

Chicken Boti Parata Roll

Ingredients:
For Marination:


Chicken boneless cut in cubes half kg
Yogurt half cup
 Cumin seeds roasted and crushed (white zeera khutta hoa) 2 tsp
Roasted and crushed coriander seeds (daniya) 1tsp
Ginger  paste 1 tbsp
Garlic paste 1 tsp
Red chilli powder 1 tbsp
Paprika powder half tsp or pinch of orange food color (this is only for giving it color)
Whole spice powder (garm Masala) 1 tsp
Lemon juice 2 tbsp (1 lemon)
Black pepper crushed 1 tsp
Oil 1 tbsp
Salt to taste
Coal 1 piece
Piece of foil

Method:



  1. Take yogurt in bowl and add salt, ginger garlic paste, cumin seeds cursed, red chilli powder, paprika powder, whole spice powder, crushed coriander seeds black pepper powder, oil and lemon juice in it and mix them well.
  2. Now add chicken pieces in it, mix and keep it a side for an hour or 30 minutes.
  3. Heat pan add marinated chicken in it firstly cook it on high flame for few minutes then let it cover and cook on medium flame till gets tender.
  4. Heat coal on flame till become red in color then put piece of foil in center of cooked chicken and carefully place coal on a foil, drop some oil on coal and quickly cover it for at-least 10 minutes. 
  5. Remove coal with foil from chicken and give them nice stir.
  6. Now its ready to use.

Sauce: (Chutney)
Ingredients:

Yogurt half cup
Mayonnaise 2 tbsp
Roasted and crushed cumin seeds 1 and a half  tsp
Garlic powder 1 tsp or crushed fresh garlic
Red chilli powder 1 tsp
Salt to taste
Chaat Masala pinch 

Method:

Take a yogurt in a bowl add all ingredients in it and mix them well. Now its ready to use.  

Paratha ingredients:

Flour (maida) 2 cups
Salt to taste
Sugar 1 tsp
oil 2 tbsp
Lukewarm water for kneading

Method:

  1. In a big open pot or tray add flour, sugar, salt and 1 tbsp oil mix them well
  2. Now add lukewarm water to flour and start kneading it 
  3. Make soft dough .(Note: it should not be very soft neither too hard )
  4. Add 1 tsp remaining oil into it and knead it again.
  5. Cover it and let it rest for 30 minutes.
  6. Now divide them in small balls, roll it like paratha, spread oil and dry flour on it and roll it again same like shown in picture.

6. Roll it and make paratha put it on preheated pan and toast it from both sides by add oil or ghee.


Assembling:


Take paratha spread sauce generously which we have prepared before then add chicken pieces, add thin round cut onions on it.
You can sprinkle finely chopped coriander leaves too (its optional) and roll it by using butter paper.


Scrumptious roll is ready to serve with white sauce

Note: Do not use zeera powder in recipe it will change the whole taste 
Roasted n crushed cumin seed is main ingredient of recipe.

The Coriander stems placed in water, covered and refrigerated. It will remained fresh for just over four weeks.

Quick and Easy Chocolate Mousses

Quick and Easy Chocolate Mousse

Ingredients: 

Cooking Chocolate 1 packet (200 grams approx)
Milk 1 tbsp
Butter 1 tbsp
Cream 1 and a half packet (200 ml)
Powder sugar 1 cup
Vanilla essence few drops
Oreo biscuits 1 big packet
Gelatin powder 2 tbsp
Quarter cup lukewarm water

Method:



  1. Put Oreo biscuits in chopper and make it coarser powder add butter in it and mix well. Put generous amount in glass to make a base of mouse.  
  2. Whip 1 packet of cream (with beater) add powder sugar in it mix well and keep it in fridge.
  3. Take a microwave save glass bowl add Chocolate and milk in it, keep it in  microwave for a minute and let the chocolate melts or you can use double boiler for the same. 
  4. In lukewarm water dissolve gelatin,Mix well.      
  5. Add gelatin mixture in melted chocolate and give it nice stir.
  6. Add vanilla Essene to it.
  7. Fold whipped cream in chocolate mixture nicely (don't use beater) with rubber spatula.  
  8. Pour this mixture in glasses prepared with Oreo based.
  9. Garnish with whipped cream and Oreo biscuits or chocolate shavings.
  10. Let it set in fridge for 2 hours.
  11. Chill it before serving.

Yummy Meat Pie

Meat Pie

Dough Ingredients:

Flour (maida) 4 cups
Yeast 1 packet
Lukewarm water 1/4 cup 
Egg 1
Salt to taste
Sugar 1 tsp
oil 1 tbsp

Method:

  1. In warm water add sugar and yeast mix them well and leave it for raising.
  2. In a big bowl take flour, salt, egg and raised yeast. Mix them well and make soft dough by adding water as required. Add oil to make it more softer.  
  3. Cover the dough and keep it aside to any warm place or you can keep it in cabinet for at least an hour to raise.   
  4. Grease pizza pan first, roll the dough and put it in pizza pan or in any thali.
  5. Roll a dough and cut thin stripes of it and keep it a side. 

Filling Ingredients:

Meat (beef) (under cut)1 pao
Ginger garlic paste 2 tbsp heaped
Freshly crushed black pepper 1 tsp or as you like
Salt to taste
Onion finely chopped 1 medium
Oil 2 tbsp

 Method:


  1. In a sauce pan heat oil and add meat saute till meat change its color (on high flame)
  2. Add ginger garlic paste and salt to it and stir them well. 
  3. Cover it and let it cook on slow flame till meat gets tender. ( if needed you can can water into it)
  4. When meat become tender add crushed black pepper and finely chopped onion, saute till water dries.
  5. Let it cool and add it to chopper to shred. 

Sauce Ingredients:

Tomatoes chopped  2
Finely chopped garlic 1 tsp
Finely chopped onion 1 small
Red chilli powder 1 tsp
Salt to taste
Oregano quarter tsp
Paprika powder 1 tsp
Oil 2 tbsp
White Vinegar 1 tsp

Method:  


  1. Heat oil in a pan add chopped onion an saute till become transparent (do not fry too much).
  2. Add chopped tomatoes, salt, red chilli powder and paprika powder into it. Stir and let it cook for 2 minutes or till oil comes on surface of the mixture.
  3. Let it cool and blend it into blender till smooth paste, now add oregano and white vinegar to it and its ready to use.
Note: You can keep this sauce in fridge for a week.

Assembling:  


Spread sauce on rolled pizza dough then add meat filling on it. Sprinkle Cheddar and mozzarella shredded cheese on the top, cover pie with long cutted dough stripes in criss cross. Brush egg on it and bake it in preheated oven on 180 degree for 20 minutes.
(You can make 2 big or 3 small pie in this quantity)
